I am having people over for dinner on Friday night and I want to serve Italian. I am limited due to some of my friends being lactose intolerant, so I thought I would make pasta with "meat" balls, but I am not sure the best way to put together a veggie meatball. Any help would be great.

I like to use tofu, bread crumbs (but Italian seasoned to save time) fine chopped vege (carrots, celery, bell pepper, onions, garlic, etc) and eggs. Mix it together until it is moist - form small balls, saute them with/in olive oil until browned. Them let them cook in your sauce (I'm assuming red sauce) for about 30 minutes.
It will be great.
