Try making cupcakes. You can portion them out more precisely and just bolus for them. Not a problem. My daughter unfortunately is a junk food lover and she has pretty good numbers.
If you do a pastry make sure it has alot of fat in it so that her blood sugar does not go high too fast. But How about individual fruit salads with yogurt and nuts on top! Try to keep it healthy for her.

I say go with cupcakes. Don't let her diagnosis make her different from the other kids. I was 6 when I was dx and I still got to eat cake, oreos, slushies growing up..I just had to learn WHEN i could have them (ie not when I was 20mmol/L haha) and to take insulin for them.

hi Haley's grandma here! My daughter decided to make yogurt parfaits - Dannon Light and Fit Greek yogurt - vanilla flavored (9 cbs) mixed with sugar free jello in strawberry and lime(don't make the jello, just use the powder). She used 5 tubs of yogurt - 2 colored with strawberry, 2 colored with lime and one left plain. Layered them in small plastic glasses and topped with cool whip mixed with sugar free strawberry jello powder. She made 6 servings! The carb count came out to less than 15 cb per parfait!! Didn't taste too bad either!

Fruit and yogurt are great, but not to celebrate a birthday. You need to live in real life. Cupcakes are perfect to estimate carbs, and also more fun for a kid's birthday party.
Years ago people with diabetes used to eat restrictive, low sugar diets. Thankfully for the last 20 years we've focused instead on counting carbohydrates and adjusting insulin to the food eaten.
Take care and happy birthday to your little girl. I was diagnosed with diabetes at age 4 and am now 39 and complication free. I have a budy job, great husband and 6-year-old (nondiabetic) son. Diabetes makes life different but it won't keep your daughter from having a long, good life.
