Vegan - Type 1

I know this is a bit of a long shot here but I am wondering if anyone else here is vegan and type 1. I am “transitioning” (almost 100% now) but having a bit of a problem finding low carb items that are vegan yet still have a decent amount of calories in them. My weight is maintained currently but I do not want to drop a bunch of weight either.

I am vegan too! Congrats! Nuts and seeds are low carb/ high calories. Avacado… coconut oil. nut butters…

Thank you :slight_smile: haha Yeah I eat seeds/nuts all day long, hopefully I get creative enough to do something with them, and black olives. I only eat them off my finger tips though cause it makes them taste better.

Being Female I worry Less about weight Loss - but for what its worth, i actually put on some weight being vegan (My A1c also went down, I have more lows- it could be that too). You can make some pretty yummy sauces with nuts. Cashew cheese is HEAVEN! I also found it super helpful checking out different vegan restos for inspiration. I would suggest that you take a good vitamin- My Iron levels went a little bit low 6 months ago. I take the “blood Builder” from mega foods and everything is good now.

I found some vegetarian cheese made with cashews once and it was great but since I am eating cruelty free I strayed away from it. I am going to google that now though and see what options are available. Thank you for the reminder.

Yes, we have a lot of Whole Foods, Natural Grocers, etc. They both happen to be a block from me now as of a few months ago. I will look for that brand there. I get pretty lazy when it comes to making things. It is more of a time factor really.

One thing that is amazing is Daiya cheesecake. Not really low carb if you eat the entire thing like I do though. Their cheese is rather gross, but they do not sprinkle it on their cheese cake so we are good there.

Do you take any other supplements besides the one you mentioned? I found a protein powder that contains all of the amino acids from several different proteins we are suppose to have.

Just curious, since you went full vegan did your insulin:carbohydrate ratio change much?

I havent tried the cheesecake but I agree their cheese is GROSS. There is a raw vegan cheesecake made from cashews at my whole foods- they normally have it near the juice bar with the other deserts. I cant for the life of me remember the name of the brand.

I take lots of supplements - I take a multivitamin, a probiotic, an omega 3 supplement and a vitamin D supplement. I get my stuff from www.luckyvitamin.com - typically a little cheaper.

insulin carb ratio didnt really change - Im on pens still. I work out pretty frequently and end up taking less lantus at night, but i think thats more tied into exercise.

my carb ratio didnt change - I take less lantus at night sometimes but thats mostly because i excercise frequently so this lowers my levels ususally.
