I didn't read the other replies, so I'm sorry if this is repetitive.

I was on Humalog and NPH (Humulin N) for many years.  If she takes the NPH in the morning, it will peak in the afternoon which means she can't skip lunch or she will go low.  I was able to skip breakfast if I wanted.  If I skipped supper, sometimes I would go low, sometimes I wouldn't.  For me, I didn't have to take any Humalog before lunch because the NPH peak covered the meal.  So it was nice to have a shot-free meal.   There's pros & cons to every insulin regimen - all you can do is try and see how it goes.

just weighing in on the lantus v. levemir issue - i have had some nasty reactions to levemir. I assume it was an allergy situation. I was on levemir for 4 days, so 8 shots. 8 beautiful welts, quarter sized or bigger, bright red and itchy, didn't go away for over a week. Also, my BG was in the high 200s low 300s for those four days. 

It depends on individual bodies, I guess. 

NPH is a pretty rough road. However my body did respond to it better as a child then I did on lantus. however, all freedom of eating will be gone. For the NPH peak at lunchtime you absolutely MUST eat at exactly the same time and exactly the same amount everyday. It is doable, diabetics have been doing it for 50 YEARS. and it is still a viable option, it just takes some real dedication. =)
