New Years

I have decided that I will be hosting a New Year's Eve party at my house. I'm having my friends bring snacks but I was wondering if anyone had any good carb-safe and easy recipes that are more for parties than meals. It doesn't have to be elegent or formal, its just a bunch of my friends and me hanging out at my house.

greek yogurt dip!! (delicious and low carb) - use it to dip anything -- veggies, chips, bread...

 

15 oz. fat free plain greek yogurt

1 packet of hidden valley ranch dry dip mix

 

 

stir, dip, and enoy :D

Popcorn does not have too many carbs.  You can add a variety of spices to make it more diverse.

Why not just make normal food and bolus? :)

Pizza, wings, nachos...beer? Crappy beer has low carbs.

I guess to add on, are your other friends diabetics as well? Or is the low carb thing just for you?

I'd think you can just have normal food and load up on insulin, no?

Its just me and normally I'm all for just eating normal foods and taking insulin, but lately I've been having troubles keeping my sugars down...last night I was at 332 so i took my lantus and sliding scale humalog and I still woke up at 265...I had keytones yesterday and my A1C is outrageous, so now I just kind of want food that won't send my sugars skyrocketing..but thanks for the advice, any other day I'd be doing that for sure :)

Im with pat I eat whatever and just test and take more insulin... but dlife.com has a lot of recipes, I saw one yesterday it was cheese beer dip, it looked really good!

Yeah, please don't get me wrong, I didn't mean to sound rude because upon re-reading what I wrote, I sound like a d!ck. Haha.

If your numbers have been high, I would be feeling the same way...even though last week I was in Providence, RI with my sister (also a T1) for xmas and my 14 day average went from about 129 to over 200! Crazy what drinking and eating at all hours of the day will do to one haha.

Do you eat at really late or weird hours? I couldn't get my glucoses down last week either. I'm referring to your being in the 300's, bolusing (a lot I assume) adn still being high. I know that if you have been high for awhile it takes a longer time for it to come down, and often likes to fight coming down to normal. I woke up one morning at 7, tested and was 113, I was happy :). Then I woke up again at 10:30...hadn't eaten anything, and my glucose had magically jumped to 280. Let's not mention the time I tried to test and all my glucometer said was "HI" haha.

So yeah, in that case you could go for lower carb stuff, but just base it on what your glucose is doing at the time.

Cheeses and smoked sausages (you can buy turkey sausages to go with your cheeses for completely guilt-free snacking!). Smoked cheeses if you can find them -- great all by themselves. Nuts. Veggies and dip. All pretty much carb-free for us.Happy New Year to you!

Buffalo Chicken D--1 brick of cream cheese, 1/2 cup ranch dressing, 1/2 cup shredded cheddar, 1/2 cup Frank's hot sauce, 13 oz. can of chicken breast (drained).  Bake in a glass dish for 20 minutes or so at 350.  Serve with tortilla chips (or celery as a low carb option).  Easy to make and always a big hit! 

That should say Buffalo Chicken Dip!

...also remember that while they don't have carbs, peoples' suggestions do have protein/fats (chicken/cheese/sausage) that are digested slower and will still cause ur glucose to spike...but after about 4-6 hours rather than immediately

homemade buffalo wings (be careful of dips like ranch and/or bleu cheese)

veggies, veggies, veggies

chili with shredded cheese (you can eat as meal but others can use as chip dip too)

pretzels break down pretty nicely for glucose readings.

I made an egg casserole and people friggin love that stuff.  And since it's mostly eggs it's easy for me to eat too.  Here it is:

Ingredients:

 

6 eggs

¼ cup milk

Assorted vegetables- chopped

            (onions, green peppers, red peppers, broccoli, etc.)

Ham (optional- can substitute other meats)

Crescent rolls (1-2 tubes)

1 cup mozzarella cheese (shredded)

1 cup cheddar cheese (shredded)

1 tsp pepper

1 tsp salt

 

Recipe can be doubled.

 

Directions:

Pre-heat oven to 350.

 

Roll crescent rolls onto bottom of casserole dish.  Press together seams to make one complete crust.

 

Line crust with meat choice.

 

In large bowl, mix together eggs, milk, salt, pepper, vegetables, and both cheeses.

Pour batter into casserole dish.

 

Cook for 20-30 mins- casserole is ready when center is firm.

If recipe is doubled, cooked for an additional 15 mins.

 

wow the buffalo chicken dip and egg casarole look sooooo good, im gonna save these!

Boneless buffalo chicken strips are great, and so are little smokies. My family usually does snacks on New Year's Eve, and we always make these things called manpleasers. All they are are water chesnuts, wrapped in bacon, baked, and then dipped in BBQ sauce. They're great appetizers.

You guys are all awesome with your ideas!! I'm totally adding them to my diabetic cookbook that I have! My blood sugar levels have gone down, so now I'm not totally going all diabetic foods on everyone, but i have some veggies for me to snack on in case I get too high.
