Well my doctor told me not to change my diet so I still eat I guess ok
An old post but a possibly worth while input: My wife’s a very brittle diabetic of over a half century. One of her favorite lunches is an 8" flour tortilla, a 2" strip smeared with mayo & mustard, white cheese (Swiss or motz) and a decent amount of deli-meat. Usually roast beef or pastrami but even balony works well. I usually steal 2" from one end. I make slaw & cukes & onions so I know what’s in there - no sugars. A few chips according to her BS reading.
I have to say, that pretty much sums it up.
I was raised to eat a balanced and varied diet of carbs, protein, and veggies. That didn’t change when I became diabetic, and it hasn’t changed since. I eat what’s available and I eat what appeals to me. Everything in moderation. And I firmly believe that’s much healthier and more sustainable than more restrictive and extreme fad diets. I eat food. It’s good.
Re: lunch - I buy low carb bread (EnerG Light White Rice Flax Loaf) which has 7 grams of carbs per slice, so I can have two pieces for 1 unit of insulin. It’s a little dry, but I like having a whole sandwich, and then I have 15 carbs left over (I typically take 2 units for lunch) for fruit, dessert, or a few chips. I also make REALLY good low carb chocolate muffins! I make a bunch and then freeze them.
