One of our favs is to spread a couple tablespoons of guacamole onto a tortilla and top with thin sliced smoked turkey (Oscar Mayer is the best) and salsa and shredded cheddar cheese. Roll it into a wrap and eat. My 5-year-old doesn't like the guac but will eat with the turkey, salsa and cheese. For lunch you can also do cheese and crackers or peanut butter crackers.
Couple ideas for dinners...
Fajitas are an easy recipe to make on Sunday night and then add the cold chicken and peppers and onions to salad or reheat for fajitas the next night.
Tacos are fast and can be pretty low carb too (just have to count the tortillas or taco shells).
I also love garlic cous cous. It cooks in less than 10 minutes and is a good addition to any meal. It's filling and doesn't sky rocket my blood sugar like other carbs. My favorite is the garlic flavored Near East brand.
